Ingredients
Barbecued Halibut Steaks
1/4 cup reduced-sodium soy sauce
1/3 cup reduced-sugar apricot jam
3 tbsp ketchup
1 tbsp red wine vinegar
5 oz each)
Ziti and Zucchini
6 oz dry ziti pasta
2 medium zucchini
2 tsp olive oil
2 tbsp slivered basil
2 tbsp grated parmesean cheese
Instructions
Barbecued Halibut Steaks
1. Preheat broiler or ready the grill.
2. Combine soy sauce, jam, ketchup, and vinegar in small bowl. Measure out 1/3 cup of mixture and set aside as a sauce.
3. Place Halibut steaks on broiler rack and brush with remaining sauce mixture. Broil 4 inches from heat until browned and cooked through. About 5 minutes, or grill on 1 side only until cook, about 10 minutes.
4. Spoon reserved sauce over fish. A serving equals 1 steak.
5. While grilling onions slce 4 onions in half lengthways. Place onions on baking sheet coated with cooking spray. Broil 4 inches from heat until browned. If grilling, place directly on the grill grate, and grill until soft. Divide into 4 portions.
Ziti and Zucchini
1. cook ziti according to package directions; drain.
2. While ziti cooks, slice each zucchini in half crosswise. Then slice each half into eights lengthwise.
3. Place zucchini in a medium bowl and microwave until just sot, about 3 minutes.
4. Toss zucchini with cooked ziti, oil, basil, and cheese.
