Basic Whole Wheat Bread - TastyPlanner.com

This recipe makes 8-10 lbs. of delicious, whole wheat bread dough in the DLX (Electrolux)mixer.
Ingredients
8 cups wheat berries, milled (or spelt or kamut)
5 cups hot water
1/2 cup oil
1/2 cup honey
3 T. yeast
3 T. lecithin
1 1/2 t. salt
Optional: 3 T. gluten
Instructions
In DLX mixer, add water, oil, honey, yeast, and lecithin. Slowly shake in flour, until the dough cleans the bottom of the bowl in front of the scraper (12-14 cups). Add salt. Set the timer for 9 minutes. Turn finished dough out onto oiled counter, and form loaves or buns, rolls, etc. Let rise until double, bake at 350 until bread sounds hollow when tapped on the bottom. Cool on racks.
