B.B.T. (BACON, BOK CHOY, TOMATO) with tangy lemon, ginger and garlic mayo sandwich - TastyPlanner.com

This is a twist on the traditional B.L.T. sandwich. This version is a simple yet tasty alternative to the traditional American lunchtime favorite. Enjoy :)
Ingredients
1/2 package of your favorite uncooked bacon
4 stalks of petchai (baby bok choy or regular bok choy)rinsed well, bottoms removed, patted dry and sliced into four equal parts (slicing depends on size.. if using baby bok choy only remove the bottoms and rinse)
1/2 of a yellow onion sliced
2-3 splashes of Kikkoman Soy Sauce
1 beautifully ripe yet firm tomato sliced
6 leaves of Romaine or fresh spinach leaves (optional)
3 White or Wheat hoagie rolls sliced 3/4 lengthwise
For spread:
3 garlic cloves minced or a heaping tablespoon of store bought minced garlic
1/2 cup Real Mayonaise
1/4 teaspoon of lemon powder or lemon juice to taste
grated fresh ginger to taste (YUM!!)
5 shakes of Tabasco (optional)
Instructions
In a fry pan cook bacon as directed on packaging until almost crisp. As bacon becomes crisp and lovely add the sliced onions and bok choy. Be sure to turn your heat down and saute the three ingredients together until the onions are almost willty. Add a splash or two of soy sauce and give it a quick toss. Remove the mixture from heat and set aside.
In a separate bowl whip together the mayo, garlic, ginger, and lemon juice or powder. Adjust the garlic, ginger, and/or lemon juice to suit your taste.
In the microwave heat the hoagie rolls for 20 seconds. When done remove from the microwave and carefully open the roll. Using a knife or rubber spatula slather each side of the roll with the sauce. Then put either the romaine or spinach leaves on one side followed by the tomato slices…then add heaping spoon fulls of the bacon, onion, and boy choy mixture. Add a pickle on the side and viola!
