Ingredients
1/2 Lb dry pinto beans
1/2 tbs vegetable oil
1/2 Lb smoked sausage sliced into 1/4 to 1/2 inch slices
1/2 medium onion chopped
1/2 green pepper chopped
1 (14.5 ounce) can diced tomato with juice
4 cups of beef stock
1 tbs brown sugar
1 Tbs Worcestershire Sauce
1 tsp hot sauce
Instructions
1. Sort, wash and drain beans discarding any bad ones or other foreign material.
2. Add beans to pressure cooker and cover with water, 2 inches over beans.
3. In open pressure cooker heat the water until boiling then stop heat and cover pot allow it to sit for one hour.
4. After one hour drain the beans and discard the water and then place them back in the pc.
5. Add all remaining ingredients to cooker and stir to mix.
6. Cook under high pressure for 25 minutes and then use rapid pressure release.
7. Use slotted spoon to remove the beans and sausage because there will be extra liquids in there or you can thicken the remaining liquids.
