A simple take on the classic Russian dish of sautéed pieces of beef served in a sauce with sour cream.
Ingredients
1 cup sour cream at room temperatire
1 Lb tenderloin or top sirloin strips (approx 1-inch x 2.5 inches)
6 tbsp butter
2 tsp fresh tarragon, chopped
1 pinch of nutmeg
1/2 Lb sliced cremini mushrooms
1/3 cup chopped shallots (or onions)
1/2 Lb of egg noodles
Instructions
Start cooking egg noodles.
Melt half of the butter in a large pan on low heat. Increase the heat to med-high and add beef. Brown both sides of beef quickly, but avoid burning the butter by having the heat too high. Add salt and pepper to beef while cooking. Remove browned beef to bowl and set aside.
Reduce the heat to medium and add shallots to the pan. Cook for about one to two minutes to soak up meat drippings. Transfer shallots to the bowl that’s set aside.
Melt the rest of the butter to the pan. Raise temperature to medium high and add the mushrooms. Add nutmeg and tarragon while cooking and stir occasionally for about 4 minutes.
Reduce heat to low and add sour cream to the mushrooms, mixing thoroughly. If sauce is too thick, add a few teaspoons of water. Do not let the sauce simmer or boil or it will curdle the sour cream. Stir in beef and shallots. Salt and pepper to taste. Serve over egg noodles.
