Ingredients
2 heaping cups mixed raw nuts (whatever are your favorites I personally like cashews, almonds and walnuts in my mix)
1/2 cup date sauce
1/2 cup shredded unsweetened coconut (optional)
2 heaping Tablespoons of unsweetened cocoa powder or ground raw cacao
1/2 cup organic coconut oil
1 ts. Organic vanilla extract
1/4 ts. cinnamon
1 cup date sauce
16 oz. Silken Tofu
Instructions
The night before soak pitted dates in water – I use a Mason jar filled to the rim with pitted dates and then fill it 1/2 way with filtered water. After it’s soaked for a few hours blend it in the Vitamix or blender to make an applesauce consistency. Now you have sweet date sauce to sweeten with=o)
For the crust I grind the nuts in a coffee grinder (or Vitamix). I mix the ground up nuts with about a 1/2 cup of date sauce to make a thick dough-like consistency. Then I smoosh the mix into the pie dish forming a pie crust. If it’s too sticky to work with try grinding some raw cashews into a fine powder or organic coconut flour to help with the stickiness.
For the pie filling blend cocoa powder, coconut oil, vanilla extract, cinnamon, & date sauce together. Blend until it’s a smooth thick rich chocolate. Add in the 16oz. of Silken Tofu and blend until smooth. Pour contents into the pie shell.
Chill pie in fridge for at least an hour.
