Ingredients
4 pound chicken
1 Lemon
1 small onion
1 sprig each rosemary, tyme, tarragon
1-2 Tbs each: rubbed sage, dried tyme, dried rosemary
salt
pepper
Instructions
Heat oven to 400 degrees
Salt/pepper the chicken
Cut up lemon and onion into chunks
Place lemon, onion and fresh herbs into cavity (don’t pack too tight)
Dust chicken with dry herbs
Place on roasting rack and put in oven
Cook until thermometer in deep part of breast reaches 163 degrees
Let the chicken rest for about 10 minutes
