Black bean and Corn Quesadillas - TastyPlanner.com

Ingredients
2 cup shredded Monterey Jack cheese (reduced fat)
1 can black beans, rinsed and drained
1 cup frozen corn, thawed
1 small chopped onion
2/3 cup finely chopped fresh cilantro
12 8inch flour tortillas
Instructions
combine all but the tortillas in a bowl. Stir. Brush tortillas with water, barely damping them, not soggy. Place one tortilla on a cookie sheet, spread the mixture evenly over the tortilla. Top with another tortilla. Continue until all tortillas are filled.
Bake at 400 degrees for 8-10 minutes,or until crispy and the cheese melts.
We like to eat them with our hands but if you’re the knife and fork type, you can add salsa, sour cream, or more cheese as toppings.
