Black Bean Chili with Butternut Squash and Swiss Chard - TastyPlanner.com

interesting fall stew
Ingredients
2 tbsp olive oil
2 1/2 cup onions (chopped)
3 garlic cloves (chopped)
2 1/2 cup butternut squash (peeled)
2 tbsp chili powder
2 tsp ground cumin
45 oz black beans (rinsed drained)
2 1/2 cup vegetable broth
14 1/2 oz diced tomatoes (juice)
3 cup swiss chard (packed coarsely chopped swiss chard leaves from 1 small bunch)
Instructions
Heat oil in heavy large pot over medium-high heat
Add onions and garlic; sauté until tender and golden, about 9 minutes
Add squash; stir 2 minutes
Stir in chili powder and cumin
Stir in beans, broth, and tomatoes with juices; bring to boil
Reduce heat and simmer, uncovered, until squash is tender, about 15 minutes
Stir in chard; simmer until chard is tender but still bright green, about 4 minutes longer
Season to taste with salt and pepper
Ladle chili into bowls and serve

This was really good, had just a little bite but I made a few alterations. I used diced tomatoes with chipotle peppers, added a touch of cayenne and as weird as it sounds about 2 tbs of maple syrup, it gave it an interesting more complex taste. I also used kale instead of chard because that’s what I had on hand.
