Ingredients
1 cup cooked instant brown rice
1/2 cup chopped scallions
2/3 cup canned black beans (rinsed and drained)
1 tomato, diced
2 Tbsp chopped fresh parsley
1 Tbsp lemon juice
2 tsp extra virgin olive oil
1 small apple
Instructions
Mix cooked rice with scallions. Top with beans mixed with tomato, parsley, lemon juice, and olive oil. Serve with smaill apple.
