Blackend Tilapia with Creamy Dill Sauce - TastyPlanner.com

Tilapia is a great fish for those who don’t think they like fish. It won’t stink up your house and is very mild in flavor.
Left over suace is good for a vegi/chip dip.
Ingredients
1 tablespoon butter
1 tablespoon olive oil
4 (4 ounce) fillets tilapia
Cajun's Choice (or similar) blackening spices
-Alternately Old Bay adds tons of flavor with not much heat.
1/4 cup mayonnaise
1/2 cup sour cream
1/8 teaspoon garlic powder
1 teaspoon fresh lemon juice
2 tablespoons chopped fresh dill
Instructions
Mix mayonnaise, sour cream, garlic powder, lemon juice and fresh dill in small bowl and place in the fridge for an hour or more to let the flavors marry.
Sprinkle tilapia liberally with seasoning and let it sit a few minutes.
Melt butter and oil over meduim high heat.
Cook tilapia about 3-4 min per side until it begins to flake. Heat should be high enough that this forms a cripy crust without drying out the fish.
Frozen tilapia works GREAT for this dish as it buys you a bit more time before the fish dries out.
