Blackened Chicken Salad - TastyPlanner.com

Crisp zucchini and cucumber provides a refreshing contrast to spicy strips of skinless chicken.

Ingredients
For Chicken:
3/4 lb. total)
1 t. blackened steak seasoning
1/2 T. olive oil
For Salad:
2 cups baby spinach
2 cups romaine lettuce
1 cup cubed zucchini
1 cup cubed cucumber
Sliced green onions, to taste
1 tomato, wedged
croutons (optional)
Low-fat, ranch dressing
Instructions
Lightly sprinkle both sides of chicken with blackened steak seasoning. In a large skillet heat the oil over medium heat, and add chicken. Cover and cook until no longer pink (170 degrees).
Assemble the salad with chicken on top.
