Easy and fluffy pancakes. I’ve tried a few versions; this particular one uses yogurt for the protein.
Ingredients
2 cups vanilla yogurt
2 large eggs
4 T. oil
4 T. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Instructions
Whip the yogurt, oil, and eggs in the blender until smooth. Add the remaining ingredients and pulse until completely mixed. If batter is thick, add water by the tablespoon.
Cook as you like your pancakes cooked.
