Blueberry-Cranberry Bread - TastyPlanner.com

Ingredients
1 pint blueberries, rinsed but not dried off
3 cups plus 3 Tablespoons whole wheat flour, divided
2 cups sugar
1 cup Craisins
1 cup Chopped Pecans
2 cups vegetable oil
4 eggs
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
Instructions
Preheat oven to 350 degrees. In a medium bowl, combine the blueberries and 3 tablespoons of flour. Toss to coat evenly.
In a large bowl sift flour, baking soda, and cinnamon.
In mixer, combine vegetable oil, sugar and eggs. Slowly add flour mixture. Blend in pecans and craisins. Then slowly fold in blueberrys. Spoon the batter into two greased 9×5 inch loaf pans. Bake for 55 to 60 minutes or until a wooden toothpick inserted into the center comes out clean. Allow to cool slightly and then remove to a wire rack to cool completely.
