Blueberry French Toast Bake - TastyPlanner.com

FREEZER Meal for busy families. A great make ahead breakfast for holidays or get away weekends.

Ingredients
1 loaf bread
8 oz cream cheese
2 c blueberries, fresh or frozen (divided)
1 doz eggs
2 c milk
2 t vanilla
1 c syrup
1 c sugar
2 T corn starch
Instructions
FREEZER Meal Preparation:
Label a GALLON ziplock bag with “French Toast” and a QUART ziplock bag “Sauce”.
Cut 12-16 slices of bread into 1" cubes. Cut cream cheese into 1/2" cubes. Divide blueberries into two 1 c servings.
In a large mixing bowl whisk together:
12 eggs
2 c milk
2 t vanilla
1 c syrup
Add bread, cream cheese and 1 c blueberries to bag labeled “French Toast”. Pour egg mixture over top. Squeeze out any extra air and seal bag.
Add sugar, corn starch and 1 c blueberries to bag labeled “Sauce” and seal.
Label another GALLON sized freezer bag with recipe name and date. Place “French Toast” and “Sauce” bags into this bag, seal, and freeze.
COOKING INSTRUCTIONS: Preheat oven to 350
Defrost in fridge 1-2 days. Spray casserole dish with cooking spray and pour contents of bag “1” into baking dish. Bake covered with foil for 30 min. Uncover and bake an additional 30 min or until center is firm and surface is lightly browned.
SAUCE: In a medium saucepan, heat “Sauce” contents with 1/2 c water. Bring mixture to a boil, and cook for 3-4 min, stirring constantly.
Reduce heat and simmer for 10-15 min. until the blueberries have burst. Stir in 1 T butter and pour over baked French Toast. Add fresh whipped cream for a treat!
For an easy holiday meal, serve with hard-cooked eggs and kielbasa.
