Blueberry Muffins - TastyPlanner.com

My dad used to make these for us as kids. His mother made them for him when he was a kid. I think the recipe came from his grandmother. The recipie has now been passed down to me. They are easy, great for the kids to help (just watch out for the blueberry juice – it stains!), and are delicious! The blueberry muffin-eating contest lives!

Ingredients
1/2 c. shortening
3/4 c. sugar
2 eggs
1/4 c. milk & 1/4 c. blueberry juice
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. cinnamon
pinch of salt
2 c. blueberries (Wyman's, miniature blueberries are the best to use)
Instructions
Cream sugar and shortening. Add eggs, then flour, spices, baking powder, salt, and milk/juice. Fold in berries (don’t forget to drain the berries to get the juice/milk mixture. If you don’t drain the berries, you get too much juice.) Bake in muffin tins at 350 about 20 minutes or until lightly brown.
