A variation on a navajo taco that’s tasty and fun to eat.
Ingredients
Meat mixture:
1 small onion, diced
1 garlic clove, diced
1/2 red bell pepper, diced
2 small tomatoes, seeded if you care and diced
1 lb ground beef
1 can black beans
chili powder
garlic powder
onion powder
Guacamole, your favorite recipe, mixed extra creamy and fluffy with a mixer works well for this recipe.
Grated cheese of your preference
Tortilla base:
10-12 small tortillas, cut into small strips
canola oil, for frying
Instructions
Heat a small amount of oil and cook onion, garlic, and bell pepper until soft. Add tomato and cook until soft. Season with about a tablespoon of chili pepper, depending on heat preference. Remove from pan.
Add meat to the same pan, season with onion, garlic, and chili powders.
While meat is cooking, heat the frying oil. Start cooking the tortilla strips in small batches, and remove to a baking rack when crispy.
When the meat is cooked, add back the vegetables and the can of black beans.
Assemble as desired, especially if your children think the guacamole is pudding for arranging with the other food elements.
