Braised Tofu and Broccoli in Curried Coconut Milk - TastyPlanner.com

My version of one of my favorite, easy recipes from How to Cook Everything Vegetarian.

Ingredients
3 large onions (quartered)
35 oz can of tomatoes with their liquid
2 T of neutral oil
Salt and pepper to taste
2 T curry powder
2 lb extra firm tofu (cubed)
1 1/2 C Broccoli (I use fresh but frozen should be okay)
1 1/2 c coconut milk
*cous-cous optional*
Instructions
1. Combine onions and tomatoes in a food processor. Heat oil in deep skillet or broad saucepan over medium heat. When hot, add the onion-tomato mixture, along with salt and pepper and the curry powder. Cook until it thins and becomes sauce-like, about 10 minutes.
2. Add the tofu and broccoli and cook until tofu swells slightly and the broccoli are tender. Then stir in coconut milk and bring to just about a boil, stirring occasionally.
*I like serving it over cous-cous . . . yum!
*another option is to fry the tofu before putting it in the mixture, I do this on occasion because Aaron likes his tofu crispy
