Bran Muffins by the Pail - TastyPlanner.com
This is a healthy choice for breakfast or a snack. Refrigerates for up to 1 month – makes a lot! Can also be frozen.

2 c. boiling water
4 c. Bran Buds
1 c. Crisco
2 1/2 c. sugar
4 large eggs
1 quart buttermilk
2 c 40% bran flakes
6 c. flour (4 white, 1 1/2 cracked wheat)
5 tsp. baking soda
pinch of salt
Pour boiling water over buds. In ice cream bucket, mix shortening, sugar, and eggs. Add buttermilk, bran flakes, flour, soda, and salt. Mix in bran buds, put in muffin tins 2/3 full. Bake at 425 for 15-20 minutes. Batter can be refrigerated for 1 month. Makes a lot!
Can add raisins, blueberries, or pumpkin.
