Bread Salad (panzanella) - TastyPlanner.com

My brother made this for us on a vacation in Mexico and it was amazing, so I made him send me his recipe.
Ingredients
1 2-days stale French bread or boule, cut into 1-inch cubes (6 cups)
1 teaspoon kosher salt
2 small italian tomatoes, cut into 1-inch cubes
1 cucumber, sliced 1/2-inch thick
1/2 red onion, cut in 1/2 and thinly sliced
20 large basil leaves, coarsely chopped
3 parts olive oil to 1 part balsamic vinegar (3/4 of a cup total)
Instructions
You want to have equal parts of cubes of bread, tomato and cucumber.
Re-moisten the bread in a mixing bowl with a little water, just so that it begins to get chewy, and not like a crouton anymore.
Add a little water at a time until the bread is about right, but remember that the bread will also soak up some of the vinaigrette as well, and you don’t want it overloaded with wet.
Then, mix in the onion, cucumber, tomato, and basil and then toss with the vinagrette — again, add a little at a time so that you don’t end up with a soggy pile.
Also, when tossing everything together, don’t forget salt and pepper.
