Breakfast Casserole for a Slow Oxidizer - TastyPlanner.com

I developed this recipe for my husband who is on a diet. Taking the Jillian Michaels test, in her book “Making the Cut.” It was determined he is a Slow Oxidizer. This casserole has the right ratio of 40% protein, 30% fats, and 30% Carbs to satisfy the requirements of a Slow Oxidizer."
Ingredients
8 Jumbo eggs
1/2 Cup grated Parmesan Cheese(3.5oz)
1 Cup low fat 2% Cottage Cheese(8oz)
5 Cloves Garlic
5oz Frozen Spinach thawed and drained
10oz Frozen Broccoli thawed and drained
12oz can fat-free Evaporated Milk
16oz Cabot Colby Jack Cheese
2 Cup Minute Instant Whole Grain Brown Rice
9.6oz Jimmy Dean fully cooked Hearty Sausage crumbles
2 Cup Chicken Stock divided
1/2 Cup Crystal Hot Sauce
2 tsp McCormick Rotisserie Chicken Seasoning mix
Instructions
Cook Rice according to directions using 1 3/4 Cup Chicken Stock instead of water.
Heat oven to 350 F
Spread rice in 9 × 13 Casserole dish
Beat eggs with Evaporated Milk, remaining Chicken Stock, and Hot sauce.
In sauce pan, over medium heat, combine Turkey Sausage and garlic. When warmed add Broccoli and Spinach. Cook off extra fluid.
Add Parmesan, Colby Jack cheese,Cottage Cheese
and seasoning.Warm through
Once combined layer on top of Rice in casserole dish.
Pour Egg mixture over top and Cook at 350 for 50 minutes or until knife inserted comes out clean
