Breakfast Cookies - TastyPlanner.com
This is my adaption of the breakfast cookies recipe my mom found in the advice section of the local newspaper. I substituted yogurt for ricotta because I’m lactose intolerant and ricotta’s lactose heavy.
2 cups Whole Grain Cereal (cheapest you can find)
1/4 cup white flour
1/4 cup whole wheat flour
1/4 cup wheat germ
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup brown sugar
1/4 cup canola oil
2 teaspoons vanilla extract
1/2 cup low fat yogurt
Instructions1. Preheat oven to 400 degrees. 2. Grease baking sheet. 3. Crush cereal into coarse flakes and place in large mixing bowl along with flours, wheat germ, baking soda, salt and cinnamon. 4. Blend well. 5. In separate bowl blend well the egg,sugar, oil,vanilla and yogurt. 6. Add the dry ingredients and mix until just moistened. 7. Drop by tablespoons full onto baking sheet, leaving 1 inch between dough. 8. Flatten dough with fork. 9. Bake 18 to 20 minutes, or until nicely browned.
