Breakfast Hashbrown Casserole
3 1/2 cups hash browns
1 pound ground sausage OR 1 1/2 cups chopped ham
1 teaspoon dry mustard
Salt and pepper to taste
2 tablespoons flour
2 cups milk
6-8 eggs, beaten
3 cups shredded cheese (Colby-Jack or Cheddar)
1 can chopped green chiles (optional)
1 chopped onion (optional)
Preheat oven to 425 degrees. Cook and drain sausage and onions. Add flour and dry mustard and stir. Set aside. Place hash browns in a 9 × 13 inch baking dish. Spread sausage mixture over the hash browns. Mix milk, cheese and eggs and chilis, pour over the top of the casserole.
Bake for 15 minutes at 425; reduce heat to 300 and bake for 30 minutes more or until set.
