Breakfast "Quiche" Casserole in Crockpot - TastyPlanner.com

I wanted something hot for Breakfast that I didn’t have to make in the morning. I also plan to put this in tortillas with salsa to freeze for breakfast burritos later. The hasbrowns or flour/baking powder mixture form a “crust” for the quiche casserole. You can also add black beans,jalapenos and salsa for a southwestern twist

Ingredients
Required:
1 Dozen eggs
3 cups Milk or Heavy Cream
Optional Fillings 1:
8 oz of frozen Spinach thawed, drained and chopped
1 block of Feta Cheese crumbled
8 oz portabello mushrooms chopped
1 red bell pepper chopped
1 tbsp lemon juice
1/2 tsp of Cayenne pepper
salt to taste
1/2 Tbsp olive oil
Optional Fillings 2:
8 oz Bacon cooked, drained and crumbled
1 lbs of Sausage cooked, drained and sliced
1 lbs ham chopped into 1/2 in cubes
1 onion chopped
1 green bell pepper chopped
1 lbs sharp cheddar cheese shredded
salt to taste
black pepper to taste
1/2 cup of flour
1/2 tsp baking powder
-or-
1 frozen package of hasbrowns (sliced or squares)
Instructions
Beat eggs in a bowl
Slowly stir milk or cream into eggs
Add any spices to egg mixture and set aside
Cook any filling meat (ham/bacon/sausage) according to package directions and chop
Saute onions, spinach, and peppers in olive oil
Stir fillings into egg/cream mixture
Grease crockpot with butter or pam
If using hashbrowns, line frozen hasbrowns along bottom of crock
If using flour/baking powder, mix in with eggs
Pour egg/cream/filling mixture into crockpot (over hashbrowns)
Cook 6 hours on low or 4 hours on high.
Add 2 hours on low or 1 hour on high if using still-frozen hasbronwns
