Broccoli Soup with Parmesan Toasts - TastyPlanner.com

Ingredients
2 tbsp olive oil
1 onion, finely chopped
2 tbsp plain flour
750 ml chicken stock
450 g broccoli, cut into small florets
350 ml milk
1/2 tsp nutmeg
25 g butter
75 g parmesan
1/2 baguette
Instructions
Heat the oil in a large saucepan. Add the onion and cook gently for about 4 minutes. Stir in the flour and cook for 1 minute, then gradually stir in the stock. Add the broccoli, bring to the boil, then reduce the heat and simmer for about 7 minutes, until the broccoli is tender.
Process the soup in a blender until smooth, then return it to the saucepan. Stir in the milk, nutmeg and salt and pepper to taste, and heat through.
Meanwhile, make the toasts. Beat butter and 1/3 of the paremesan, grated. Grill 8 slices of baguette on one side, then turn and spread with the butter. Top with the remaining parmesan, shaved. Grill until golden and bubbling, and serve with the soup.
