A refreshing alternative to traditional bruschetta these kabobs are easy for party guests to hold and eat. Super cooling food in the summer months and packed with good for you lypocene from the tomatoes.

Ingredients
5 medium size on the vine tomatoes
8 oz. of fresh mozzarella (or smoked fresh mozzarella)
2 cups of organic italian dressing
Fresh rosemary (Optional)
Whole fresh basil leaves
1 loaf italian or french baguette cut into 2 inch cubes or wedges
3 - 4 inch long wooden toothpicks or skewers
Instructions
Cut the tomatoes into wedges by slicing the tomato in half horizontally, then turn the tomato with the stem towards the ceiling and cut it into quarters, holding the cut halves together. Next, cut the mozzarella into 1 inch cubes.
Place the italian dressing into a shallow bowl large enough to hold the tomatoes and the mozzarella. Add the rosemary. Add the tomatoes and mozzarella, allow to marinate for at least 30 mins up to 1 hr. in the refrigerator.
While that marinates, cut up the bread. Put one bread cube onto each of 30 toothpicks (this will be the base), then put one basil leaf on top of the bread cube.
Once the tomato mixture is marinated, finish the kabobs with a tomato wedge on top of the basil and then a piece of mozzarella.
