Bruschetta Salad a la Spa - TastyPlanner.com

Traditional bruschetta can be messy to eat, here’s a super easy way to transform it into a cool summer salad that can serve as a side dish or main course at lunch. Consider adding freshly grilled salmon for a more substantial meal.

Ingredients
2-3 medium on the vine tomatoes
6, 1/2 inch slices of fresh mozzarella or smoked mozzarella from the log
4 cups Earthbound Farms (or similar) Fresh Herb Salad
Organic Italian Dressing Low Sodium
Italian or French Bread cut into 2 inch cubes
fresh basil leaves, torn
Sprinkling of Toasted pine nuts (optional)
Instructions
Divide the salad onto 2 plates. Slice the tomatoes into half wedges and divide onto the plates. Place 3 slices of mozzarella on each plate. Do the same with the basil and pine nuts (if using).
Drizzle 1 tablespoon of dressing on each salad and top with bread cubes.
