I first heard of this dish while watching Two Fat Ladies but it is a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner.
The cold chopped vegetables (and cold chopped meat if used) are fried in a pan together with mashed potato until the mixture is well-cooked and brown on the sides.

Ingredients
1 lb cold potatoes
2 oz dripping or lard
1 onion, finely chopped
8 oz cooked cabbage or sprouts, chopped
1/2 tsp Salt or to taste
1/2 tsp Black pepper, freshly ground or to taste
Instructions
Finely chop the potatoes and crush slightly. In a frying pan melt half the fat and lightly fry the onion. Mix in the potato and greens and season well.
Add more dripping or lard. Press the bubble into the hot fat and fry over a moderate heat until browned underneath. Turn the bubble over, add the last of the fat and fry until the other side is browned.
