Delicious!!! This frosting works great to pipe on cakes or just a nice spread. Can play with milk to make a little smoother or a little more sugar to thicken for piping. For a chocolate flair just add dry cocoa powder according to taste, makes a light brown frosting. For a richer color chocolate frosting melt 2 squares unsweetened chocolate melted, may need to add more sugar if you do the melted chocolate.

Ingredients
1/3 C. butter softened
1/4 C. cream or evaporated milk
1 tsp. pure vanilla (gluten free)
1/4 tsp. salt
4 C. powdered sugar, divided
milk, if necessary
Instructions
Place butter in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 4 and beat about 1 minute, or until creamy. Stop and scrape bowl. Add cream, milk, vanilla, salt, and 1 C. powdered sugar. Turn to Stir Speed and mix about 30 seconds. Stop and scrape bowl. Turn to Speed 2 and mix about 1 1/2 min., or until well blended. Stop and scrape bowl.
Turn to Stir speed. Gradually add remaining 3 C. sugar and mix until blended. Stop and scrape bowl. If necessary for the consistency you desire add milk 1 teaspoon at a time until smooth.
Yields enough for a 2 layer 8inch round cake or 1 9×13X2 cake.
