Buttermilk Pie – No Crust

1 cup sugar
2 cups Diamond D Dairy Buttermilk
2 eggs, beaten
2 tablespoons butter, melted
1/2 cup flour
1 teaspoon lemon zest
Combine sugar and flour
Add beaten eggs, melted butter, buttermilk, and lemon zest. Pour into buttered 9 inch pie pan. Let rest in pan for 10 minutes before baking. Bake at 400 degrees for 10 minutes. Reduce to 350 degrees and continue baking for an additional 30 minutes. Cool on a cooling rack. *Garnish with fruit or berries and or drizzle with fruit puree. Pie must be kept refrigerated. Serve chilled.
