Cabbage Salad - TastyPlanner.com
Chef: Barlowgirl
A version of the potluck standby, without the high-fat ramen noodles. After mixing up the dressing, be sure to taste and adjust the seasonings accordingly. Broccoli “slaw” could be substituted for some or all of the cabbage.
Ingredients
1/4 cup sesame seeds
1/3 cup sliced almonds
1 head cabbage, finely chopped
6 green onions, sliced thin
1/3 cup vegetable oil
2 tablespoons sesame oil
2 tablespoons water
2 tablespoons soy sauce
1/4 cup cider vinegar or rice wine vinegar
1 tablespoon sugar
1 tsp. each salt and pepper, or to taste
1 small can mandarin oranges
1 tsp. minced fresh ginger (optional)
Instructions
1. Toast sesame seeds and almonds on a cookie sheet in oven until lightly toasted. Watch carefully; they can burn quickly.
2. Mix cabbage and green onions in a large bowl.
3. To make dressing, mix oils, soy sauce, water, vinegar and sugar in a jar with a tight lid. Shake well.
4. Taste, and adjust seasonings as needed, adding salt and pepper here.
5. Pour on dressing and toss well. The flavors get better if this is refrigerated for an hour or two before serving.
6. Just before serving, add almonds and sesame seeds to cabbage mixture. Top with mandarin oranges for a pretty presentation.
7. Serve immediately.
