Ingredients
2 Cloves Garlic, Peeled
1 tablespoon light mayonnaise
1 tablespoon reduced-fat sour cream
1 tablespoon lemon juice
1 cup chopped cooked chicken breast
1/4 cup chopped celery
3 tablespoons grated Parmesan cheese
8 outer Romaine Leaves
1/4 cup Caesar-flavored Croutons
Instructions
Place the garlic in a small custard cup and add 1 tablespoon water. Microwave on high power for 1 minute, or until the garlic softens.
Flatten the garlic by crushing it with the side of a knife and finely chop and place in a medium bowl. Stir in mayonnaise, sour cream, and lemon juice until blended. Add chicken, celery, and 2 tablespoons of the cheese and stir until combined.
Arrange the romaine leaves on a serving plate. Spoon 2 tablespoons of the chicken mixture down the center of each leaf.
Cut the croutons, if necessary, into approximately 1/2" pieces. Sprinkle the croutons over the chicken, and top w/ the remaining 1 tablespoon cheese. Serve or cover and chill for up to 3 hours.
