Ingredients
4 cups sugar
1 cup clear jel or cornstarch
10 cups water
7 qts. pitted sour cherries
Instructions
Mix sugar, water and thickening. (If you use cold water, it can all go in at once). Bring to a boil, stirring constantly, till thick and clear. Add a little red color at this time if desired.
Pour over pitted cherries. Put in jars and process 10 min. at 5 lbs. pressure or 20 min. in water bath. Makes 7 quarts.
