I was looking for a moderately light snack filled with nutrients and had a refrigerator stocked with vegetables. This did the trick, it’s amazing how a little bit of mint can turn a salad around!
Ingredients
3 Vine-ripened tomatoes
1/2 cup sliced Parmesan cheese
1/4 cup extra virgin olive oil
1 lime, juiced
1 large carrot, diced
1 cup diced baby portobello mushrooms
5 Mint leaves
1 Shallot
Instructions
In a large mixing bowl, combine chopped tomatoes (cut in small wedges), with the remaining ingredients, along with diced mint leaves.
Let stand for 15 minutes at room temperature before serving.
Substitutions: Mint with cilantro, Parmasean with Asiago
Extra ingredients to consider: sweet kernel corn (canned or fresh), asparagus spears.
