Caramel Potatoes - TastyPlanner.com

If using small fresh potatoes for this recipe, boil them until about 3/4 done.
Rather than using a spoon or spatula with sharp edges to stir the potatoes, use a wooden spoon to avoid cutting them, because the caramel will make dark lines in the cuts.
The sugar is very hot as it caramelizes and will burn if it splatters and will melt a plastic spatula.
Serve with roasted pork, frikadeller or other meats.

Ingredients
1 cup of sugar
2 tablespoons of butter
29 oz) can of small potatoes
Instructions
1. Sprinkle the sugar in a skillet and cook over medium heat until the sugar melts and turns golden brown, stirring constantly with a wooden spoon and watching carefully to prevent burning.
2. Add the butter and stir until the butter melts. Drain the potatoes, reserving 1/3 cup of liquid. Add the reserved liquid carefully to the skillet and stir until the mixture is smooth.
3. Add the potatoes and cook for 5 to 10 minutes or until golden brown, turning to coat evenly.
