Caramelized Onions - TastyPlanner.com

I had a recipe which required caramelized onions. It said they would be available in jars at the supermarket. However, I was determined to make my own. This is how I make them based on a combination of tips from around the web. Use these in my Baked Eggs recipe.
Ingredients
1 medium yellow onion, finely cut into long slices
1 tsp white sugar
1 Tbsp sweet sherry or white wine
Instructions
Place sliced onions in a dry pan on low heat for a few minutes until onions start to brown. Stir a couple of times to keep them from burning. Then add a bit of butter or oil. I tend to eyeball this instead of measuring. You want enough to coat the onions without having them swimming in oil.
Leave over low heat for about twenty minutes, stirring every 5-7 minutes to make sure none are burning. The onions will go translucent and will eventually brown as the sugars caramelize.
After about twenty minutes, add the sugar and stir quite often for the next five minutes or until all the onions look about right. Then finally add the sherry or wine to deglaze the pan, stirring the onions quickly to coat in the sticky sauce.
- Note: You may want to turn on an exhaust fan if you have one, because the smell tends to permeate the rest of the house for the remainder of the day.
