Carrot and Coriander Soup - TastyPlanner.com

One of the best soups ever. Coriander is a British term for what North Americans tend to call cilantro. Try this soup, its so easy!
Ingredients
2 lbs carrots, peeled and chopped coarsely
2 med potatoes, peeled and chopped coarsely
3 packed tbls of fresh coriander (cilantro), chopped finely
1 litre stock - good quality veg stock is best
1 squeeze of lemon
Instructions
Put the vegetables in the stock in a large pot. Add water, if needed, to just cover veggies. Boil until tender. Remove from heat. Stir and allow to cool 5-10 minutes.
Puree the soup in a blender, or using a hand blender right in the pot.
Add coriander, lemon, salt and pepper, and heat the soup just to the boiling point.
Serve with crusty bread.
Optional: put a dollop of sour cream on top of the soup in each bowl and put a small sprig of coriander on top of that.
