Carrot Souffle

Ingredients
2 LB. carrots, sliced or chopped
1/2 CUP MELTED BUTTER..... I USED 1/4 CUP
1 CUP SUGAR...... I USED 3/4 CUP
3 TBSP flour
1 TSP baking powder
1 TSP vanilla extract
3 eggs, beaten
1 TSP CONF. SUGAR FOR DUSTING
Instructions
1. PREHEAT OVEN TO 350 DEGREES
2. BRING A LARGE POT OF SALTED WATER TO A BOIL. ADD CARROTS AND COOK UNTIL TENDER (ABOUT 15 MINUTES OR SO)
3. DRAIN AND MASH WELL.
4. TO THE CARROTS, ADD MELTED BUTTER, SUGAR, FLOUR, BP, VANILLA EXTRACT AND EGGS.
5. MIX WELL AND TRANSFER TO A 2 QUART CASSEROLE OR A BAKING DISH PAN. SPRINKLE WITH CONF SUGAR.
6. BAKE IN PREHEATED OVEN FOR 30 MINUTES.
