Cheater Chicken Pot Pie - TastyPlanner.com

Ingredients
1 1/2 lbs Chicken Breast or Chicken Tenderloin, cubed
1/2 tbl. spn. Poultry seasoning
2 tbl spn. extra virgin olive oil
1 pkg. frozen Soup Vegetables (or other veggies of your choice)
1 14 oz. can chicken stock
1/2 cup flour
2 cans croissant rolls
Instructions
Preheat oven as directed by instructions for Croissant rolls. Unroll 1 can of Croissants onto baking sheet, leave flat and bake in oven for approx 4-5 min. Remove from oven when golden brown.
Season Chicken with Poultry seasoning, salt, and pepper. Cook in pan with olive oil. Once chicken is fully cooked add Chicken Stock and frozen vegetables. Bring to boil and simmer for 10 minutes. Add flour to chicken slowly while whisking briskly. Thicken as desired.
Line bottom of baking dish with baked croissant pastry. Any excess tear into small bits and fold into Chicken & Vegetable mixture. Pour Chicken & Vegetable mixture over baked croissant. Use second can of croissants to cover baking dish.
Bake in oven 10-15 minutes until Croissant is golden brown.
