Cheese, Leek, Potato and Bacon Layers - TastyPlanner.com

I don’t have a proper name for this, although it probably has one. Suggestions welcome! It’s exceedingly rich and very tasty. Not one for if you’re on a diet, that’s for sure!
For a vegetarian version, just skip the bacon.
Quantities are approximate – adapt as you feel necessary.
Ingredients
1 dessertspoon of butter
1 leek
2 or 3 large handfuls of grated cheddar cheese
4 large potatoes
4 rashers of bacon
Instructions
• Sweat the leek gently with the butter in a frying pan for a short time to soften it.
• Meanwhile, slice the potatoes reasonably thinly and set to boil until mostly cooked (better to leave them just a little firm so they don’t fall apart). Peeling is optional.
• When the leek is done, remove from the pan and cook the bacon.
• When the potatoes are also done, drain and shake off or pat dry to remove excess water.
• In an ovenproof dish, place a layer of potatoes at the bottom, then layer each of the ingredients on top until they’re all used up. You’ll probably have about two thin layers of most things (depending on the circumference of your dish). Finish with a layer of cheese on top.
• Cover the dish and place in a medium-hot oven for 10min, then take the lid of and leave in for another 5min to crisp the top slightly if you like.
• Serve on it’s own or with salad – delicious, but extremely rich! You probably don’t want to eat too much at once. Good for leftover lunch the next day, just re-heat in the microwave with a lid on to prevent it drying out.
