Chicken & Asparagus Pasta - TastyPlanner.com

A simple and low-fat meal which is really tasty. If you like it extra creamy, just add more goat’s cheese.
Ingredients
1 1/2 cups uncooked pasta
1 cup chopped asparagus
6 ozs chicken breasts
2 Cloves Garlic
1 tbsp olive oil
1 14 oz can diced tomatoes
1 oz soft goat cheese
2 tbls Parmesan cheese
Instructions
Cook the pasta until al dente. Meanwhile, steam the asparagus.
Remove any bones and skin from the chicken and cut it into cubes. Chop the garlic. Add the oil, chicken and garlic to a non-stick pan and saute over medium-high heat, until the chicken is golden brown. Add the tomatoes, including their juice, and simmer 1 minute more.
In a large bowl, add the cooked pasta, steamed asparagus, chicken mixture and goat cheese. Toss gently to mix evenly.
Serve on plates and sprinkle each serving with parmesan.
