Chicken breast with avocado and cheese
Ingredients
4 chicken breasts
2 tbsp cornstarch
1 tsp Cumin
1 tsp garlic salt
1 egg
1 tbsp water
3 tbsp oil
1 avocado
3/2 cups shredded Monterey Jack cheese
1/2 cup sour cream
1/4 cup Green Onion
1/4 cup Red Pepper
4 cherry tomatoes
Breadcrumbs
Instructions
Mix cornstarch, cumin and garlic salt; coat chicken breasts.
Mix egg and water together. Dip chicken breasts in, coat with breadcrumbs.
Cook chicken on medium for 2 minutes each side in oil in frying pan.
Slice avocado and place on chicken in baking dish.
Bake at 350 degrees for 15 minutes.
Top with sour cream, red pepper and cherry tomatoes.
