Chicken Breasts with Creamy Basil Sauce - TastyPlanner.com

A cream sauce flavored with basil and garlic accompany chicken breasts for a quick and easy meal. I made this up one night while attempting to use up several half-used ingredients. My family was ultra pleasantly surprised by the outcome. It was delicious.
Ingredients
2 tbsp butter
5 cloves garlic, minced
1/4 tsp each salt, pepper, italian seasoning
4 boneless skinless chicken breasts
1 cup cream
1 large tomato, coarsely chopped
1/4 cup fresh basil, coarsely chopped
Instructions
In large non-stick skillet, melt butter over medium-high heat until sizzling. Sate garlic. Salt, pepper, and add italian seasoning to chicken. Add chicken to skillet; cook 8 to 12 minutes or until juices are clear. Remove from skillet; set aside. Reduce heat to medium. Add cream to skillet stirring constantly. Stir in tomatoes and basil. Return chicken to skillet. Cook 4 or 5 minutes or until heated through. Garnish with basil leaves if desired. Serve over rice or with a vegetable.

I made the basil sauce in a separate skillet and then mixed them in. Also, added the tomatoes while the chicken was still cooking and then another batch of tomatoes in the sauce skillet.

Extremely tasty dish. I let the cream cooked just a tad bit too long but it was still delicious.
We diced the chicken before adding it to the sauce, allowing for bite size pieces and easier eating.
