Chicken Cashew Broccoli Stir Fry - TastyPlanner.com

A basic, healthy stir fry with loads of flavor.

Ingredients
• 2 broccoli heads
• 1lb chicken strips
• extra virgin olive oil
• Lightly-salted cashews
• Grated cheese (either Jack, Sharp or Mozzarella in my experiences)
optional:
• Cayenne pepper, ground
• Curry powder
Instructions
• Cut chicken into bite-sized chunks
• Cut broccoli into bite-sized chunks
• Set stove surface to mid-heat, cook the chicken with a bit of olive oil in a large skillet. Optionally add as much cayenne pepper and/or curry powder to give the dish some pop.
• When chicken is cooked and has just begun to show signs of browning, stir in the broccoli, turn down to low heat and cover
• After the broccoli is sufficiently “steamed”, typically 5 min, stiry in a handful or two of cashews. Cook on low for a couple minutes just to let the flavor of the cashews sink in while still keeping them crunchy
• Serve with grated cheese on top. Make sure to grate while it’s still hot so the cheese melts on top

We liked this dish. The only thing I think would have been nice is a little sauce. I really liked the curry and the cayenne pepper with the chicken and I loved the cashews. We would eat this again but it won’t be a family favorite.
