“A marvelous way to use leftover chicken, this hearty casserole is ideal on a chilly night. Just add a salad and some fruit for an easy dinner.” Recipe courtesy of Weight Watchers New Complete Cookbook.
Ingredients
6 ounces wide noodles
1 tablespoon reduced-calorie margarine
4 teaspoons all-purpose flour
2 cups fat-free milk
1 tablespoon grated Parmesan cheese
2 cups cubed cooked skinless chicken breast
1 red onion, chopped
2 tablespoons chopped canned green chiles
1 tablespoon dijon mustard
4 teaspoons seasoned dried bread crumbs
Instructions
1. Cook the noodles according to package directions; drain. Preheat the oven to 375 degrees F; spray a 2-quart casserole with nonstick cooking spray.
2. In a medium nonstick saucepan, melt the margarine. Sprinkle with the flour; cook, whisking constantly, 2 minutes. Whisk in the milk and cheese; cook, whisking constantly, until thickened, 2-3 minutes. Remove from the heat. Stir in the noodles, chicken, onion, chiles and mustard. Transfer to the casserole; sprinkle with the bread crumbs. Bake until browned and bubbling, 20-25 minutes.
