Chicken Fajita Casserole - TastyPlanner.com
Quick and easy twist to your favorite Mexican dish!!!
3 TBS Oil (vegetable, olive, or canola)
1 package fajita seasoning mix
2 medium size chicken breasts
1/2 green pepper
1/2 Red Pepper
1 can refried beans
6 Soft Burrito Floured Tortilla Shells
2 Cups of cheddar cheese
Sour Cream/ Salsa/ Green Onion/ Lettuce (Optional)
Preheat oven to 375.
Cut up chicken into thin strips.
Slice peppers and onions into thin strips.
Heat oil up in a skillet, then add chicken, peppers, and onions.
Saute until almost done, (You should have some juice from the chicken and peppers after frying)
Add your Fajita seasoning.
Continue sauteing until chicken is fully cooked.
In a round casserole dish, place 2 tortilla shells in the bottom and sprinkle a little cheese over it.
Then add half of the fajita mixture over that and sprinkle with a little more cheese. Place 2 more tortilla shells over that.
Sprinkle a little more cheese over the shells, then your refried beans, then a little more cheese.
Place 2 more tortilla shells over that. Sprinkle a little more cheese then add the remainder of fajita mixture. Top with remaining cheese.
Bake for 30 Minutes to let the flavors come together.
