Chicken Fajitas - TastyPlanner.com

Pretty simple dish but takes a lot of prep. Make sure to use freshly juiced citrus rather than bottled.
Ingredients
2 lbs raw boneless skinless chicken breasts, cut into strips
2 tbsp olive oil
2 limes, juiced (can substitute 1/2 lemon)
1 onion, cut into strips
1 red bell pepper, cut into strips
2 cloves garlic, minced

12 small tortillas
5 leaves lettuce
1 cup cheddar cheese, shredded
1/2 jar salsa
1/2 cup sour cream or nonfat plain yogurt (optional)
1 batch guacamole (optional)
== Fajita seasoning: ==
4 tbsp chili powder
2 tbsp Cumin
2 tbsp oregano
2 tsp garlic salt
Instructions
Marinate chicken in lime/lemon juice by placing them together in a plastic bag in the refrigerator. (This can be done up to a day in advance.)
While the chicken is marinating, cut up the garlic, onion, and bell pepper. Also shred the lettuce, and prepare the guacamole if using.
Set out cheese, lettuce, salsa, sour cream, and guacamole in small bowls with serving utensils.
Place the tortillas in an oven set to low heat, covered in foil to prevent drying out. (Don’t microwave the tortillas as this will make them brittle.)
Combine the spices for the fajita seasoning in a cup or bowl.
Heat oil in a large skillet over a burner set to medium heat. Drain chicken. Add chicken, garlic, onions, bell peppers, and fajita seasoning to the skillet and stir well to spread seasoning evenly. Saute mixture until chicken is thoroughly cooked and vegetables are tender, 10-15 min(?)
Serve!
