easy recipe for chicken that tastes great and has become a family favorite. Also a wonderful dish for company
Ingredients
8-10 thinly sliced chicken cutlets
1 egg
Bread crumbs
6 tbsp butter
3 tbsp olive oil
1 tsp lemon juice
1 tsp garlic powder
1 tsp dried basil
1/2 cup dry vermouth
1 cup beef broth
Instructions
Put 1/2 the butter and all of the oil in large skillet and heat over medium high heat. Dip the chicken in egg beaten with 2 tbsp water and then in bread crumbs. Cook the chicken in batches. Don’t crowd the frying pan. Saute the chicken on both sides until brown. Remove cooked chicken to a platter and place in preheated 200 oven. Cook the rest of the chicken and keep warm in oven while making the sauce.
Sauce: Reduce heat under skillet to low. Add vermouth, garlic, basil and lemon juice to skillet scraping up the browned bits. Reduce liquid. Add the broth and stir well. Put the chicken back in the skillet. Cover and simmer for 20 minutes or so. Put chicken on a platter Take some of the broth and mix with 2 tbsp flour or corn starch. Stir into the sauce for a few minutes until thickened.Pour some sauce over the chicken. Remaining sauce put in sauce boat and pass at the table.
Serve with noodles
