Chicken Fried Rice - TastyPlanner.com

A chicken fried rice recipe.
Ingredients
1 tbsp sesame seeds
1 tbsp Peanut Oil
1 lb chicken, cut into strips
2 cups of White Rice
2/3 cup baby carrots, cut up into pieces
1/2 frozen peas
2 tbsp vegetable oil
2 eggs
soy sauce
sesame oil
Instructions
In a saucepan, add 4 cups of water and the rice and bring to a boil. Reduce heat and simmer, covered, for 20 minutes.
In a skillet, roast the sesame seeds over high heat until brown. Save them for later. Add peanut oil, chicken, and half the sesame seeds to the skillet.
In another saucepan, boil the carrots for 3-5 minutes. Add the peas, stir and then drain. Save for later.
In a wok, heat vegetable oil. Add the eggs and quickly stir to scramble them. Add the vegetables and stir for a minute. Stir in the chicken, rice and the rest of the sesame seeds. Add soy sauce (about 1/4 cup) and sesame oil (about 1 tbsp). Toss until mixed thoroughly.
