Chicken Meatball Penne - TastyPlanner.com

A kids favorite!
2 cups of uncooked penne noodles
1 1/2 cups of tomato passata or crushed tomatoes
1 cup of low-sodium good quality stock, any kind
1/2 cup red wine
1 small tin of tomato paste
1 carrot, peeled and finely chopped
1 sm onion, finely chopped
1 clove garlic, finely chopped
1 tbsp dried basil
1 lb of lean ground chicken or turkey
1 tbsp worchestershire sauce
1/2 teaspoon salt
1/4 tsp pepper
1 tbsp dried oregano
Fry onion, then add wine, give it a stir and scrape bottom, then add tomatoes, tomato paste, stock, garlic, basil, and carrots. Stir well and bring gently to a boil then reduce heat to medium and allow to simmer uncovered.
Mix the chichen, w-sauce, oregano, salt, and pepper in a mixing bowl. Form into small meatballs and drop into the simmering sauce as you make them. Once you are done dropping meatballs in, simmer the pot for another 15-20 minutes, stirring gently once or twice.
Cook the penne noodles until al dente.
Serve the noodles with the meatballs on the side.
Optional: sprinkle with parmesan cheese.
